Red, White and Blue Popsicles

What better way to celebrate America than with patriotic red, white and blue popsicles! These healthy frozen treats are fun and festive for the Fourth of July and Memorial Day.

Ingredients:

  • 1 lb fresh blueberries
  • 1 lb fresh raspberries
  • 16 oz. greek yogurt (regular or vanilla)
  • 2 teaspoons honey (or preferred sweetener)

Tools Needed:

  • Blender or food processor 
  • Popsicle molds and popsicle sticks
  • Measuring cup with spout or paper cup

Instructions:

  • Blend raspberries, stir in a little water to thin out fruit mixture and add 1 teaspoon of honey. Pour into your popsicle molds and freeze until set, about 1 hour.  
  • Mix greek yogurt with water to form a liquid and add 1 teaspoon of honey. Pour in yogurt then freeze another hour.
  • Place popsicle sticks into the pops. You can use either foil or wax paper to keep the sticks standing straight. 
  • Blend raspberries, stir in a little water to thin out fruit mixture and add 1 teaspoon of honey. Pour into your popsicle molds and freeze until set, about 1 hour. 
  • Repeat as many times as desired to create the perfect red, white and blue stripes. 
  • Freeze completely until frozen, about 3-5 hours.
  • Serve over a bowl of ice and garnish with raspberries and blueberries.

This recipe yields 10 popsicles.

Tips:

  • Try your best to pour straight into the popsicle molds to avoid the liquid from splashing against the sides. This will give you clean stripes.
